You know, like someone curled up on a couch by a cozy fire holding onto a bowl of a warm and chunky chicken pot pie with a perfectly baked golden crust on top. Perfect food and perfect setting. For my design-obsessed teen, she is the happiest when her WEEKEND dinners are not just plain delicious but they are also Pinterest-perfect.
If you ask me what is that, then THAT is something cooked with care and then laid out and served with even greater care with proper consideration for the ambient aesthetics. And believe it or not, I fall for it. She sells me the idea using different tactics in different weeks. But more often than not what works is she driving a hard bargain (takes it on her dad) earlier in the week when it’s the epic one-pot pasta or the one pot sobji die khichuri (vegetable and grain porridge) on the table most weeknights that particular week. No, what you see on the blog or my Instagram feed is not what is being cooked for dinner every day 😞
However, in the process of creating eye-pleasing meals for her and essentially my family of three, I have come to appreciate the mechanics of creating a perfect meal moment. Meals are not just meals or just means of sustenance. They go way beyond that. Meals give us moments and these moments in turn give us memories. I have so many such memories from my childhood and often I write about them. In those pristine, perfect moments, memories of a lifetime were born and all it takes for me today is to close my eyes to live them again.
Bisquick Chicken Pot Pie Recipe – Cook Quickly

Ingredients
For the Chicken Mixture
- 1 tbsp olive oil
- 1 1/2 cup fresh mushrooms, chopped
- 1 tbsp garlic, finely chopped
- 3/4 cup cup yellow onion,chopped
- 1/2 cup sweet potato, chopped
- 1/2 cup zucchini, chopped
- 1 tsp Dried thyme
- 1 tsp Dried Oregano
- 1 cup Chicken Breast Meat, Cooked and Shredded
- 2 tbsp All Purpose Flour
- 1/2 cup Milk
- 2 tsp Black Pepper
- 2 tsp Salt ( or to taste)
- 1 cup chicken stock
For The Crust
- 1 cup Bisquick
- 1 egg
- 1/2 cup milk
- 1/4 cup Butter (melted)
Instructions
- Preheat the oven to 400 degrees F.
- Heat a pan, and add the olive oil.
- Throw in the garlic and stir for a minute or two and let it get fragrant.
- Add the onion, sweet potato, salt, black pepper and stir and saute for 4-5 mins.
- Throw in the mushrooms, zucchini and continue cooking for another 3 mins.
- The veggies should be softened by now. Stir in the all purpose flour and coat the veggies.
- Add in the broth and milk and bring to a boil. Boil for about a couple of minutes and remove from heat.
- Add in the chicken and the oregano and thyme. Mix everything in and let it come to room temperature.
- In two or three medium sized oven-safe bowls, ladle the chicken mixture. The bowl should be halfway full.
- In another bowl, mix the ingredients of the crust, the bisquick, butter, milk and egg.
- And now ladle the mix over the chicken mixture so that the top is completely covered with the dough.
- Bake in the oven for 20-30 minutes till the crust is golden brown.
Notes
If you don’t have Bisquick for the crust, you can use puff pastry instead or make a batter out of 1 cup all purpose flour, 2 tsp baking powder, 1 large egg, 3/4 cup milk, 1/4 cup butter and 1/2 tsp salt
