The Eggs Kejriwal is something that I have been making for the longest time. And to tell you the truth this was always my work-from-home breakfast. But now that every day is a work-from-home day, I end up making this mostly on weekends. It is super simple and fast but none-the-less delicious.
Eggs Kejriwal is not my favorite for all the above reasons. It’s my favorite because of the one question everyone asks when they hear the name. “Is the nomenclature of this dish somehow related to Arvind Kejriwal, the chief minister of Delhi”. And my answer is “No”.
The story goes back to Mumbai and to another gentleman with the last name “Kejriwal” He was Mr. Devi Prasad Kejriwal. It is said that Mr. Kejriwal frequented the Willingdon Sports Club in Mumbai. Now Mr. Kejriwal was kind of like me who never shied away from asking for food be made to his taste. I mean I do that often and why not. So, Mr. Kejriwal would want his toast and eggs be cooked with cheese in a certain way. And of course, spiked with a ton of green chilies.
The crisp toast, the smooth cheese and the soft and delicious poached egg interspersed with a hint of green chilies here and there created a unison of flavors and textures that impressed many. And soon Mr. Kejriwal’s egg cheese toast became quite an item on the menu and his friends started ordering it. The friends told their friends and they theirs and before you knew there it was, the iconic Mumbai breakfast, Eggs Kejriwal.
Now what’s a recipe without a story. However, however interesting the story behind the Eggs Kejriwal is, I totally believe that had it not been for Mr. Arvind Kejriwal, I would not be blogging this recipe sitting in California not having ever stepped into Willingdon Club ever in my life. I believe the more famous Kejriwal did add to the intrigue around the dish and the story.
The Eggs Kejriwal I make is with Sour dough bread. But I have seen recipes with Ladi Pav or eggless Indian dinner roll too. However, I remain convinced that sour dough is the way to go as it adds to the entire equation and how. This is not a healthy choice for breakfast if you are looking for one, but the entire dish is such a conversation starter that it is my absolute favorite.

Description
Eggs Kejriwal is the iconic egg and cheese toast interspersed with green chilies!
Ingredients
Eggs – 4
Sour Dough Bread – 4 slices, sliced thick
Softened Butter – 2 tbsp
White onion – 1/2, medium, chopped finely
Serrano chilies – 2, chopped finely
Black pepper – To taste
Salt – To taste
Shredded Mozzarella Cheese – ½ cup
Red Chili Flakes – ½ tsp
Cilantro – 2 tbsp, chopped finely
Instructions
Pat butter on both sides of the bread slices.
Heat a non-stick pan over medium flame and toast the slices crisp until they are agolden brown on both sides. Remove aside.
In the same pan, poach 4 eggs sunny side up. Since it is a non-stick pan and there was some remaining butter from toasting the bread, it does not need any more oil.
Break the eggs on the pan over medium flame and cook covered for 3-4 mins.
In the meantime, line a cookie sheet with parchment paper and place the toasted bread.
In a bowl, mix together the cheese, onion, chilies, salt and pepper. Spread this mixture over the toast and place it under the broiler in the oven for 2-3 mins. Be careful not to burn.
Take them out and top with the poached eggs. Sprinkle the red chili flakes and cilantro.
And the Eggs Kejriwal is ready to be served

I use Sour dough, but any variety pretty much works. I think a thick slice works the best.
