The best gluten-free-high-protein pancakes! If you know me, you are probably aware that I just did a detox program about a month back and lost about 21.6 pounds. I workout about 5-6 times a week and try to eat healthily. However, I am a foodie and it’s a struggle to keep eating right so that the fat disappears and the muscles get stronger. I am quite sober all through the week when it comes to eating good but come Friday, My Friday Food Swings kicks in and that keeps me in a no gain-no loss limbo forever. So once a year I go on a 6-week detox program where I am allowed 6 clean meals a day. It helps me reset my eating pattern immensely.
Gluten Free High Protein Pancakes Recipe
These pancakes are something I am allowed as part of the program. They taste really good and help me with my sugar cravings. Just four ingredients and a food processor and trust me you have decadence without any guilt. I use a whey based protein powder, which is gluten-free too. And these pancakes turn out surprisingly fluffy. Now I know there will be many of you who would say why not the real flour pancakes. Well, if you are trying to see substantial weight loss, you may have a once-a-week cheat meal of pancakes with syrup but if you ate that more than once a week without offsetting it with an adequate amount of exercise, then it would be hard for you to see the scale budge.
And so the coaches I work with are all about healthy swaps. And trust me that may not taste like the real thing but it works out pretty much fine if you are planning to stay on track. For example, our head coach just gave us an easy mayonnaise recipe with non-fat cottage cheese and a few spices. That dip and a few veggies would be a perfect snack for me.
So if you are a flab warrior like me, put some thought into making your meals healthy but with a little tweak here and there. That way you will not feel left out and that in particular increases your chances of success. This was my third year doing the detox. Yes, I agree that some of the weight I lost as a part of the program would come back but then a lot of that weight is from the muscles that we build because of our consistent strength and high-intensity interval training. It’s amazing how 6 weeks of consistent effort both in and out of the gym can make dreams come true. Ingredients
- Whey Based Protein Powder – 1/2 cup
- Egg Whites – 1 cup
- Vanilla Extract – 1 tsp
- Baking Powder – ½ tsp
Instructions
- In a blender, blend all the ingredients together.
- Heat a non-stick skillet and you make use a cooking spray like Pam. I generally take a paper napkin and spray some oil in it and then use the napkin to wipe the skillet every time before pouring the batter.
- Use a quarter cup to pour the batter and cook a minute and half before flipping it. Brown on both sides before serving.
- Serve with a slight drizzle of maple syrup and berries.
