This time I’ve got Homemade Plum Jam Recipe with Whiskey and Ginger for you. I love growing fruits and veggies. And last year when we moved back to the new house we had planted quite a few fruit trees. To be specific we planted a plum, a Fuji apple, a persimmon and a fruit cocktail (it bears 4 different types of fruit – Nectarines, Apricots, Plums, and Peaches). Little did I know that a couple of these fruit trees would bear fruits within a year? Yes, my medium sized plum tree planted in the front porch bore almost 300 fruits this summer. And the bonus was that the plums were decently sweet.

Homemade Plum Jam Recipe – Whiskey and Ginder

We gave out a few to our friends and then I had enough to attempt a freezer jam. We as a family are not big fruit eaters but we love our PB&Js or our Cream Cheese and Jam sandwiches. So I thought why not jam? To begin with, I added some ginger powder. Took a taste and it tasted pretty good. But then it needed something more. I saved about a cup of jam for Ms. G. And for the rest of it, I dumped in about half cup of whiskey. And I had a dynamite of a jam. Now ask me what I am planning to use it on. I am planning to make a batch of chicken wings, which I am going to baste with this jam mixed in with some Sriracha.

Also, this is a jam, which has no pectin in it. Neither did I follow jamming techniques, which can give it some shelf life. If you’re planning on not making a freezer jam, look up some videos on YouTube on techniques to preserve the jam at room temperature. I did not have that much fruit to have justified all that effort.

It being summer, a ton of fruits are growing in our backyard and it makes complete sense to try and make jams/jellies and chutneys out of them. It is a different type of happiness to do get something farm to fork for sure. We are also growing Granny Smith apples too and I can’t wait to make some apple compote out of those. If you have a good Apple compote recipe do share with me.

Ingredients

  • Plums – 3 pounds
  • Sugar – 3 1/2 cups
  • Salt – 2 tsp
  • Lemon Juice – ¼ cup
  • Ginger Powder – 2 tbsp
  • Jack Daniels – 1/2 cup ( or any whiskey)

Instructions

  1. Wash and rinse and then quarter the plums and remove the pit.
  2. Add ½ cup of sugar, lemon juice and the salt and mix well. Store in a non reactive plastic container in the fridge overnight. This helps the plums macerate and break down naturally.
  3. The next day, in a wide-mouthed pan ( I used my Lodge Dutch Oven, dump in the plums and start cooking them. Let them cook for about 15 mins.
  4. Use an immersion blender for 3-4 minutes and break down the plums further. You can strain the mixture too at this point. I strained it because the skin of the plums had a kind of bitter aftertaste in our case. But this step is optional. And also, starting with super ripe fruit can help you avoid this step.
  5. Pour the strained mixture back in the pan and dump in the rest of the sugar and ginger powder. Mix well and cook over medium flame for a good 15 mins. Keep stirring otherwise it might burn.
  6. Now keep two steel spoons in the freezer. Once you feel that your jam is getting close to the consistency you want, take out one of the spoons and dip in the jam. Run your finger on the surface of the spoon with the jam. If it leaves a clear and defined trail, the jam is almost ready. If not, keep cooking for another 5 minutes and do the same spoon test again.
  7. Now if you want to use alcohol, add it at this point and cook for 2-3 minutes. If you cook longer all the alcohol would evaporate.
  8. The jam may look a little thin at this point but once you freeze it for 24 hours the consistency looks perfect.
