A Diwali post was not on the cards at all. The past week has been nothing short of drama with the climax being a visit to the ER with an unexplained chest pain. But I don’t know why I am yet to come out of the vulnerability of the situation. For the last few days I have held the magnifying glass so close on my life, that everything looks absolutely blurred now. I am not unsure of myself, never been at any point of time, but others’ being unsure of themselves can also bring equal misery and can more than affect you. It’s unreal how pettiness and jealousy can get to you. It can rip you apart and question the core beliefs you were brought up on. Or has the value system changed so much that covetousness is socially acceptable and to a certain extent even called for. In that case, I am so resistant to adapt.

It’s amazing how liberating the experience of being happy for others can be and yes, just like you choose to eat healthy, you can choose to think healthy too. Constant comparison is like junk food for the mind and binging will lead you to a vicious tail-chasing cycle of misery where anyone but you can see the downward spiral. Your sense-of-self deserves a lot more than that. It deserves to be nurtured and allowed to flourish as the essence of your self is indestructible and lives on through your off springs. I understand it all the more being one who lost her dad really early in life.

Today on Diwali, I have no other thoughts than asking for the wealth of enriching thoughts and intent from the Goddess. I am a dreamer and a passionate one at that and I dream with my eyes open. I know that my honest hard work will take me closer to my dreams. But on the way, I want to be able to stop and smell the roses, give a hand wherever required and live my life to the fullest. Amen!

So after all my ranting or venting, whatever you choose to call it comes the kachoris.

As I already said, today’s Diwali post was not planned for. However, the kachoris were to die for and yes, making them did make me feel better.

Description

A classic snack for Diwali or any day of the year! Try this Khasta Kachori Recipe at home and server with Green Chutney.


Ingredients

For the Dough

  • All Purpose Flour – 1 cup
  • Ghee (Clarified Butter)- 2 tbsp
  • Ice water – 1/2 cup
  • Ajwain (Carom seeds)- 1 tsp
  • Salt- 1/2 tsp

For the Stuffing

  • Moong Dal (Yellow lentils) – 1/4 cup
  • Salt- 1 tsp
  • Sugar- 1/2 tsp
  • Hing (Asafoetida) – 1/4 tsp
  • Amchur ( Dried Mango Powder) – 1 tbsp
  • Sonth (Dried Ginger Powder) – 1 tsp
  • Coriander seeds – 2 tsp
  • Fennel Seeds – 2 tsp
  • Raisins – 1 tbsp
  • Broken Cashew Pieces – 1 tbsp
  • Almond Powder – 1 tbsp
  • Red Chili Flakes – 1/2 tsp
  • Ghee (Clarified Butter) – 2 tbsp

For Frying

  • Vegetable oil- 2 cups

Instructions

  1. In a cold bowl, mix all the ingredients of the dough except the water. Try to break up the ghee and mix with the flour. This will take about 3-4 mins.
  2. Slowly add the ice cold water and make a stiff dough. Cover with a wet towel and let it rest for at least 20 mins.
  3. In the mean time, coarsely grind the moong dal, coriander and fennel seeds. Add all the other ingredients to it and mix well.
  4. In a pan, dry roast the mixture for 3-4 minutes until it is fragrant. Remove on a plate and add 2 tbsp of ghee to it and mix well. This will help it bind.
  5. Now start working with the dough. Make 12 small balls out of the dough.
  6. Take each ball and flatten it out with a rolling pin.
  7. Stuff with a tbsp of the stuffing and bring the dough together just as you would do in a potsticker.
  8. Set the stuffed balls aside for 10 mins.
  9. Now take each ball and flatten it between the palm of your hands or use the rolling pin. Be careful not to puncture the dough.
  10. Set aside the flattened discs for about 5 mins.
  11. Heat the oil in a pan. The temperature should not be scalding hot. Rather it should be medium hot.
  12. Drop the flattened discs one by one and fry them for a good 5-6 mins until they look golden brown and all the moisture in them has evaporated.
  13. Remove the kachoris from the oil and let them cool completely.
  14. Serve with traditional green and red chutney. Enjoy!

Notes

  • The slow frying of the kachoris is extremely important to retain the crunchiness of the kachoris and enhance it’s shelf life.
