My accomplishments in the kitchen mean nothing to my mom or my husband. Slogging it out in the kitchen is the last thing the former would do. It does not apply to the latter as his skill set is limited to the microwave. So when I finally managed to pull off a classic today, I really needed some sort of an acknowledgement, a pat in the back. Someone reinstating my faith in “from scratch” cooking. To think of it, this is not even “from scratch” cooking. This is “smart” cooking.

And what makes it all the more special is the fact that this is recipe of khirer sandesh that is heavily ridden with nostalgia and memories. The place I hail from in India, this dessert needs no introduction. In fact, it is less a dessert and more a snack. Yes, we Bongs snack on sweets or better known as “mishti” especially on special occasions or festivals like the one we’re having now, Navratri or Durga Pujo. These sweets (mishtis) were specially made to be offered to the Goddess in my household.
My gran made many versions of such sweets. I can still picture her in the kitchen along with her entourage of daughters-in-law making such treats especially late in the night when they had closed business for the day. In my mind, I can almost find myself standing by the kitchen door watching the frantic pace of the ladies and mom shooing away my advances at every given opportunity.I would remember going back to the bedroom and lying next to dad who would then tell me a nice story and put me back to sleep. With the festival lights trickling in from the street, I would drift off knowing that more festivities and that delicious sandesh awaited me the next day.
This recipe was requested by a friend who had got back a few traditional sweet molds from India. I too had a few which were gifted by my sis-in-law. So I promised my friend that I would have a recipe for her but did not know where to begin. And I did not have the time to take the long route. So I tried a few things and my plan worked. I am sure there cannot be an easier or smarter recipe for this classic than this.

Description
A classic sweet served during special occasions in my home state back in India. Try this Khirer Sandesh Recipe at home.
Ingredients
- Mawa Powder (dehydrated reduced milk powder)- 4 cups
- Evaporated milk – 1 can
- Green cardamom powder – 2 tsp
- Ghee – 2 tbsp
- Sugar – 1 cup
Instructions
- Mix all the ingredients with 2 cups of Mawa powder.
- Heat all the ingredients remembering to stir continuously. Keep on stirring for at least 20 minutes.
- You will see that the mixture is reducing in quantity.
- Remove from heat and add the remaining two cups of Mawa powder. Stir to mix well.
- The mixture should come together to a consistency that can be molded.
- Let the mixture cool off completely
- Once cold, take about 2-3 tbsp and make a ball. Flatten the ball between the palm of your hands.
- Lightly press the mold on top of it and store aside. Repeat until you are done with the mixture.
Notes
- Make sure the molds are washed and dried well. Do not grease them.
- Flour your hands if required if the mixture sticks.
- You can use a little more mawa powder if the consistency does not look right to you.

Is adding the 2cups of mawa makes the Sandesh soft?
Yes, it is not really very soft. Khirer sandesh is not usually very soft. Chenna sandesh is soft. Thanks Mailee for stopping by.
