Kohlapuri chicken curry recipe is my favorite and I am finding that I am treating myself with this dish quite often this month. The month of September used to be my most favorite month growing up. Why not, I was born in September. Growing up the most awaited thing to do for my birthday would be to sit with baba (dad) the evening before and sort candies and little knick-knacks that I would carry for my friends to school the next day. We did not have Costcos or supermarkets back then and the sheer excitement of seeing a big bag of candies was inexplicable.

Birthdays were never fancy affairs but two things always happened on this day, no matter what. One Baba never missed a single birthday of mine till the day he breathed his last and second, he would have Ma cook something nice and special for me every year. And then there were those special years too when I got to call all my friends and have a party.

However, the irony of it all is that I lost baba in this ill-fated month. 2001, when the whole world was left reeled, shaken and shocked by the terror attacks on the World Trade center, I would have been found wandering aimlessly and lost in the hospital premises where my dad was in the Intensive Care Unit fighting for his life. We lost him on Sept 18, 2001. But on Sep 13, my birthday, just for that day, he showed signs of recovery. I remember every evening our family would have a conference with his chief physician and I dreaded accompanying mom for those. I did not want to face the reality that he was slipping away. And on that day, as I waited outside the door with unbearable trepidation, my mom actually came out of that door smiling. She said baba was showing signs of recovery.

When I went to see him in the ICU, he was back to his old self and wished me a Happy Birthday. Who knew that was just for that day, to make me happy for just that one day? The next day he lapsed back and went on to having his organs fail on him one after the other. Till this day, I wistfully hold on to my birthday memories prior to 2001. Life has not been the same since then.

However, that said, my best half, my husband always tries to light up my day and help me make happy memories and this year was no exception. He got together with few of my good friends and gave me a surprise. I received tons of heart-warming messages, many from people I have never met and those absolutely lifted my ruminative spirit. It has been a good year, and has a lot in store and a lot to look forward to. Again thanks to all of you who have taken the time to wish me last week. Your love keeps me going.

This Kolhapuri Chicken Recipe that I am sharing today was something I tried on a sudden whim. Had I been prepared for it, I would have got the right cut of meat. But then there are things that are just meant to be. This is a Chicken Kohlapuri Recipe. Yes, I had a couple of slices of Chicken breast and I wanted something exhilaratingly spicy, something that can get the palate excited and here it was the fabled chicken rassa, kohlapuri style. Generally using chicken breasts in such classic preparations backfires as they turn out hard and rubbery. However, the brining is what saved the day for me. The chicken was tender and moist and had soaked up the rich spices really well. Brining is a neat little trick which can totally do wonders to chicken breasts.

Try out this Kolhapuri Chicken Curry Recipe at home. An exhilaratingly spicy chicken curry which rejuvenates the taste buds for sure.


Ingredients

  • Chicken – 2 breast pieces, 350 grams, cut into cubes
  • Water – 3 cups
  • Salt – 3 tsp

For the marinade

  • Ginger Garlic paste – 2 tsp
  • Lemon Juice – 2 tsp
  • Red Chilli powder – 1 tsp
  • Garam Masala – 1 tsp

For the Sauce

  • Cumin Seeds – 1 tsp
  • Coriander Seeds – 2 tsp
  • Sesame Seeds – 11/2 tbsp
  • Poppy Seeds – 1 tbsp
  • Garlic – 3 big cloves, minced
  • Onion – ¾ cup, chopped fine
  • Tomato – ½ cup, chopped fine
  • Dry Shredded Coconut – 3 tbsp
  • Red Chili Powder – 11/2 tsp
  • Kashmiri Red chili powder – 1 tsp
  • Garam Masala – 1 tsp
  • Vegetable Oil – 4 tbsp
  • Salt – To taste
  • Sugar – To Taste
  • Cilantro – ½ cup, finely chopped

Whole Spices

  • Bay Leaf – 2
  • Green Cardamom – 2-3
  • Cloves – 2-3
  • Black peppercorns – ½ tsp
  • Star Anise -1

Instructions

  1. Brine the chicken for 2-3 hours. Keep it submerged in a solution of 3 cups of water and salt.
  2. Take out the chicken, pat dry and rub in the ingredients of the marinade and let it rest for 30-60 mins.
  3. Heat 2tbsp of vegetable oil and add all the whole spices, cumin, coriander, sesame seeds, poppy seeds, coconut to it. Stir for couple of minutes or until fragrant.
  4. Add the onion, garlic and tomato, cook till the oil starts to separate from the sides and the masala changes to golden brown.
  5. Remove from heat and let it cool.
  6. Pour in a blender and make a smooth paste.
  7. Add the remaining vegetable oil, and add the ground masala paste.
  8. Throw in the marinated chicken pieces, red chili powder and add a cup of water.
  9. Let it simmer for 20-30 minutes till chicken is tender. You can adjust the amount of water depending on the consistency you want for the sauce.
  10. Add salt and sugar to taste.
  11. Add garam masala and chopped cilantro.
  12. Serve alongside rice or roti.

Notes

  • Adjust the red chili powder as per your choice to tone down the heat
