Spring is here. For me, the advent of spring also means two other things. Wait! It’s actually three other things. In a span of a month between Mid-March and Mid-April, we celebrate three very important events in our house. Sam and Gungun celebrate their birthdays now. And Sam and I celebrate our wedding anniversary in April. In other words, it’s the time of the year when a cake is something you would very often find in the fridge.

That said, I am a self-confessed cake snob. Firstly, I salute Julia Child. She says, “A party without a cake is just a meeting”. So I need THE CAKE. I have been left riled up and angry on too many occasions when the cake in question was not THE CAKE. My THE CAKE has to come from my THE PASTRY SHOP. Yes, it’s a family owned Iranian bakery in San Jose that has a strong old-school European influence. For me, a total mood uplifter is dropping in this place late in the night on a Friday for some coffee and pastry.
The last weekend, we had an early birthday celebration for Sam. Had some of our closest friends over for a small celebration and oh yes, the cake was THE CAKE. The birthday party was such a riot. I am going to dedicate an entire blog post to it.
Ok, THE CAKE or not, this time of the year I am especially kind and considerate towards the two birthday babies [I mean the man and the little girl 😉 ] and yield to most of their requests. The birthday man has been asking me for my low-fat banana bread for some time. It’s the perfect accompaniment to our evening coffee and especially enjoyed sitting and lazing in the backyard on a nice spring day like today. This banana bread is moist and replete with all the joys of a well-baked homemade delight. And most importantly, with whole wheat playing a major role in it, the guilt quotient is quite low.

Description

Ingredients
- Large Ripe Bananas – 2
- Baking Soda- 1 tsp
- Baking Powder – 1 tsp
- Salt – ¼ tsp
- Ground Cinnamon – ½ tsp
- Ground Nutmeg – ½ tsp
- Ground All-Spice – ½ tsp
- Whole Wheat Flour -1 ½ cup
- Low Fat Plain Yogurt – ½ cup
- Vegetable Oil – ¼ cup
- Light Brown Sugar – ¾ cup
- Pure Vanilla Extract – 1 tsp
- Egg Whites – ¼ cup
- Large Egg – 1
- Raisins – ¼ cup
- Slivered Almonds – 3 tbsp
- Powdered Sugar – 1 tbsp
Instructions
- Pre-heat the oven to 350 degrees F.
- Mash the bananas with a fork.
- Add the yogurt to the mashed bananas and keep aside.
- In a mixing bowl, sift the flour and add all the dry ingredients (spices, baking soda, baking powder & salt).
- In another bowl, cream the eggs, brown sugar, vanilla extract and vegetable oil together.
- Add the wet ingredients to the dry ingredients and fold in everything.
- Add the mashed banana-yogurt mix and raisins to the bowl above. Mix well.
- Pour in individual loaf pans and bake for 35 mins. Check with a tooth-pick. If a toothpick inserted in the center of the loaf comes out clean, it is done.
- Dust with powdered sugar and top with slivered almonds. Serve alongside coffee.
Notes
- If you don’t like the taste of whole wheat flour, you can replace some or the whole of the whole wheat with all-purpose flour.
- You can replace all-spice with garam masala. Works fine.
- Since the banana bread is baked in individual loaf pans, the time taken is less comparatively.
