It’s amazing how super conflicting I can be to myself. Sometimes, I can’t wait for something to end and yet at other times I am depressed for it to be ending so soon. Gungun’s school year is one such thing. When the pressure of Science projects, book reports, written assignments and tests mount up (especially during the months of April and May) I can’t wait for the school year to end. But as we are slowly heading into June and the last week of school, melancholy hits me big time. The reality of Gungun being a year older and may be a year closer to leaving home for college dawns on me. For those of you who don’t know me personally, my daughter Gungun is graduating elementary school this year. That’s ok! I see that look on you face! Yes, that’s me! Well, once a worrier, always a worrier.
Now there are few things I voluntarily engage in to dissipate such unsettling feelings. No, it’s not cooking. It would be painting, gardening and probably scrap booking. But the ONE thing that tops such lists of mine would be Baking. Baking is absolutely therapeutic to me. There cannot be a better pick-me-up moment for me than when I peek through the glass outside the oven door and the see those swelling goodies in there. There’s nothing more divine than the smell of fresh baked bread in the oven. The flour, the yeast, the butter, the sugar, the spices…every little thing brings me joy as I get ready to bake.
These Parmesan Garlic Knots that I am blogging about today are one of those things that comes together real quick and without any fuss. They are melt-in-your mouth good and are absolutely fail-safe. Unlike now, in chillier balmy evenings, these and a bowl of good soup can give a Michelin star meal a run for its money.
You will find many baked goodies on this blog like these Homemade Bagels or these Soft Pretzels, but this recipe is hands-down the easiest. I call them my Life-Is-So-Good bread, as baking them always helps me see and appreciate the good life that we are blessed with and live and savor the moment now.

Description
A garlicky, cheese, melt-in-your-mouth which comes together with absolute ease. Try out this Garlic Knots Recipe at home.
Ingredients
- Warm water – 1 cup
- Quick Rise Yeast – 1 pkt (2.25 tsp)
- Sugar – 1 tsp
- Bread Flour – 2 ½ cups
- Olive Oil – 1 tbsp
- Salt – ½ tsp
- Butter – 2 tbsp
- Garlic Powder – 2 tsp
- Oregano – 2 tsp
- Parmesan Cheese – 1/2 cup
Instructions
- In the warm water, add the sugar and the yeast and let its stand for 8-10 mins. The yeast gets all foamy at this point which means it is ready.
- In a bowl, add the flour, salt and olive oil. Mix lightly.
- Now add the yeast mixture and bring it together. I did it initially with a spatula and then with hands. (I was too lazy to even use my stand mixer.)
- Knead the dough very well for a good 10 mins.
- Now keep it in a well-oiled bowl covered with a kitchen towel. Keep in a warm place. Let it rest for 45 mins to an hour.
- The dough will double in size. Punch it down and divide it into 10 equal portions.
- Roll each portion into a rope about half a feet long. Now make a knot and keep it on a parchment covered cookie sheet. Use dry flour to make it easier to work with the dough.
- Once you’re done with all the dough, cover the cookie sheets with a loose lid and let them rest for another 30 mins. The knots will double in size.
- Melt the butter and add the garlic powder and oregano to it. Mix well.
- Brush the knots with the butter well.
- Sprinkle the Parmesan Cheese.
- Bake in a pre-heated 375 degrees F oven for 10 mins or until they are lightly browned. Don’t over-bake.
- Enjoy them warm.
