I had to make a quick trip to India to drop off my mom. She wasn’t too confident of making the trip by herself and I did not want her to be stressed. Hence, this was one helluva short and hectic trip. I was in India just for 5 days. India trips are never easy for me and they take a toll somewhere inside. There has not been one trip where on the way back I have not been filled with self-doubt. The sad eyes that say good-bye to you with a brave smile on the lips are hard to leave behind. The guilt blinds me with tears every time. In fact, I see this saree clad old lady sitting next to me now and I am terribly reminded of ma.
Crimini Mushrooms Recipe – Parmesan Stuffed Cremini Mushrooms
This time, the main objective of my trip was to get ma settled. Being away from one’s own space for 6 months can mean a lot of cleaning and sprucing to do before regularity sets in. I insisted that we eat out on many occasions, just so that we can focus on other things. And it is always such a joy to eat out in my hometown Kolkata. And not to mention the nostalgia-ridden street food. And coincidentally, on one of those days my parents-in-law were celebrating their marriage anniversary, so that was one delicious home-cooked meal I could sample too. All in all, a short but a very rejuvenating trip it was for sure.

Description
A delicious appetizer to get the party started. Try out this cafe style Parmesan Stuffed Crimini Mushrooms Recipe at home.
Ingredients
- Crimini Mushrooms – 20
- Parmesan Cheese – 4 tbsp, chopped finely
- Bread Crumbs – 2 tbsp
- Onion – 1, small, chopped finely
- Red Bell Pepper – ¼, chopped finely
- Olive oil – 1 tbsp
- Parsley – 1 tbsp, chopped finely
- Monterey Jack cheese – 3 tbsp
Instructions
- Wash mushrooms and dry off with a paper towel.
- Remove stems and chop them finely.
- Heat a pan and pour the olive oil. Add garlic and sauté until fragrant.
- Add onion, chopped mushroom stems, red bell pepper and sauté for 3-4 mins.
- Remove from heat and let it cool.
- Add Parmesan cheese and breadcrumbs.
- Use this mixture to stuff the mushrooms.
- Top with Monterey Jack cheese and parsley.
- Preheat oven to 350 degrees F.
- Bake mushrooms for 15 mins and then serve right away.
