Honestly, I really cannot get enough of this season. I just feel I savor life a lot more around this time of the year. It’s a time of the year when you have a list of hundred things to do in your mind, yet those are things that bring you immense joy. It could be decking the house and the yard for the holidays, shopping for friends and family, planning a holiday party, visiting family, or taking that vacation you had in mind for a long time, whatever it is, it does give life a break from the monotony of the daily grind.
I get a lot of happiness making little things that are celebratory or have a seasonal significance. Gungun has a lot of fun especially assisting me in these little projects. We kick-started the season with Gungun attending a Holiday Card Making workshop at our local Michaels store and then another one on Holiday Cupcakes. These are little ways I try to add to the Holiday cheer in our home. The real fun is in the anticipation of the days ahead.
Making and sharing Holiday desserts is another common thing in our household. Prior to Thanksgiving every year, I try my hand at a lot of things involving the quintessential star of the season, the pumpkin. I am not crazy for pumpkin as a vegetable but spiced pumpkin is altogether a different thing. And you know what I love the most about baking spiced pumpkin goodies this time of the year? It is the house just smelling like a million bucks with these goodies in the oven. The cloves, cinnamon, nutmeg and ginger in the air…well, that’s the holidays to me.
I went on to make Pumpkin Roll Cake and then in a few days tried making Pumpkin Scones. Ok, the story of roll cakes need to be told. It took me quite a few (read 2-3) attempts to get the roll cake right. However, the recipe today is the one which finally led me to the finish line. It may take a little effort to get it right but that should not deter you from trying. I can tell you one thing for sure, you will have a lot of fun making it.

Ingredients
For the Cake
- All Purpose Flour – ¾ cup
- Pumpkin spice – 1 ½ tsp
- Salt – ¼ tsp
- Eggs – 3
- Baking powder – ½ tsp
- Baking soda – ½ tsp
- Brown sugar – ¾ cup
- Granulated sugar – ¼ cup
- Vanilla extract – 2 tsp
- Pumpkin puree- 2/3 cup
For the Filling
- Cream Cheese – 1 pack, 8 oz
- Butter – 2 tbsp
- Milk – 2 tbsp
- Vanilla extract – 1 tsp
- Pumpkin Spice – 1 tsp
- Cinnamon – 1/2 tsp
- Salt – ¼ tsp
- Powdered sugar – ¾ cup
Instructions
- Sift the all-purpose flour.
- In a bowl, mix all the dry ingredients: flour, Pumpkin Spice, Salt, Baking Powder and Baking Soda.
- In another bowl, crack open the eggs, add the brown and white sugar, vanilla extract and pumpkin puree. Blend it together.
- Mix in the dry ingredients with wet ingredients.
- Take a 10X15 inch cookie sheet. Line it with parchment in such a way that some amount of paper sticks out at both ends of the cookie sheet. This will later help to lift the cake. Generously cover it with non-stick baking spray.
- Pour the cake batter on the cookie sheet. Spread with a spatula so that it evenly covers the entire surface.
- In a 350 degrees F oven, bake the cake for 12-14 mins. It depends on your oven and could take a min less or more. Take care not to overbake the cake.
- Take out from the oven and using the additional parchment paper at both ends lift the cake and keep it on your kitchen counter.
- Now starting at one end and with the parchment paper on, gently roll the cake. Keep it rolled until it cools down. This will take about 40 mins.
- In the meantime, in a bowl take all the ingredients for the filling and blend well.
- Now gently un-roll the cake. Spread the filling evenly on the cake.
- Roll back the cake again. While rolling back this time, gently peel off the parchment paper.
- Lightly dust with powdered sugar.
- Slice the cake with a serrated knife and enjoy.
