Description
A delicious side dish for your Thanksgiving feast. Try this Stuffed Acorn Squash Recipe with sausage at home.
Ingredients
- Acorn Squash – 2, halved
- Brown Sugar – 1 tbsp
- Butter – 2 tbsp
- Chili Flakes – 1 tsp
- Salt – 1/2 tsp
For the Quinoa
- Quinoa – 1 1/2 cups, cooked
- Sausage – 1
- Cranberries – 2 tbsp
- Pepitas – 2 tsp
- Black Pepper – 1/2 tsp
- Lime Juice – 2 tsp
- Chili flakes – 1/2 tsp
- Dried Basil – 1 tsp
- Salt – To taste
- Butter – 2tbsp
- Vegetable oil – 1 tbsp
- Shredded Cheddar Jack Cheese Blend – 2 tbsp
- Finely chopped Cilantro – 1 tbsp
Instructions
- Cut the squash in half and scoop out the seeds.
- Massage it with melted butter, salt, brown sugar. Sprinkle chili flakes on top.
- Bake for 45 mins in a 400 degrees F pre heated oven. The squash should be fork tender by now.
- In a pan, heat the vegetable oil and throw in the sausage. Fry it till it gets browned on each side for about 2 -3 mins on each side. Remove from pan and rest it on a paper towel.
- Slice it after it cools down.
- Heat the same pan again, add the butter and add the quinoa. Add the sliced sausage, cranberries, pepitas, chili flakes and dried basil. Mix everything in.
- Sprinkle the lime juice, salt and pepper and finely chopped cilantro. This entire step takes about 5 mins. Remove from stove and let it cool.
- Now take the baked acorn squash and stuff with the quinoa mixture. Top it with some cheese and put it back in the oven for another 5 mins.
- Top with some more cheese before serving and sprinkle the chopped cilantro on top. Serve right away.
