Watermelon Pizza Recipe! Itβs all right if youβre not a believer. I was not too, but I am aging and things are changing. I have realized that no one but only you would know what your balance is. Knowing your balance is the key to eating right.
Eating right has been a challenge for me always. I have never been super conscious of my physical appearance. But thereβs no denying the fact that I love to look good. Looking good makes you feel good and confident. So I have on the the weight loss-weight gain joyride all my life. And quite honestly, I was very tired of it. So this year I did a detox program and lost 21 pounds and beyond that, all I am trying to do is achieve the balance.
Watermelon Pizza Recipe – A Healthy Retreat
And the balance is not ALWAYS eating right. It does involve indulgent meals but then it also involves eating it mindfully. I have been also working out at least 5 days a week. I also try and be mindful of taking a walk once in a while or use a standing desk at work. Things have been working out for me and I feel good inside. This Watermelon pizza is just perfect when it comes to my life today. A tad bit indulgent, tastes super refreshing and good and fits the bill of a mindful dessert perfectly.
This is a perfect dessert for a July 4th BBQ and potluck too. Beats the heat and looks absolutely gorgeous with the red, blue and white. The white is the cream cheese mixed in with honey and a tad bit of Balsamic vinegar. The cream cheese is just smeared on the watermelon disc and then it is topped with blueberries, strawberries, slivered almonds and fresh torn basil. Takes about 10 minutes to put it together but this recipe finds takers right away and I can guarantee you your guests will ask for you to repeat it in future summer gatherings too.

A refreshingly delicious and healthy Watermelon Pizza Recipe.
Ingredients
- Watermelon – 1 large disc
- Cream Cheese β Β½ cup, at room temperature
- Honey β 2 tbsp
- Balsamic Vinegar β 2 tsp
- Blueberries β 1/3 cup
- Strawberries β 5, quartered
- Slivered almonds β 1 tbsp
- Fresh Basil Leaves β 2-3, torn
Instructions
- Cut out a watermelon disc from the middle of a watermelon.
- In a bowl, take the cream cheese and mix it with honey and balsamic vinegar.
- Smear it on the watermelon.
- Now top it with the blueberries, strawberries, almonds and basil leaves.
- Cut slices and serve.
